Samantha Koon, Owner and Chief Taste Tester
Samantha is the president of Koon Enterprises, owner of Zybell House Bed and Breakfast, and owner of the Gourmet to Go prepared meal service. She conceptualized and launched these Monticello-based businesses in 2016 and has dedicated herself to growing these businesses while serving the Monticello and surrounding communities. Samantha comes from a family with a history of successful entrepreneurs, including food service ventures. As owner of the Zybell House, she hosts both travelers and local residents who attend classes at the Zybell House. The food themed events have proven very popular and are some of Samantha’s favorites! Prior to jumping into the world of small business entrepreneurship, Samantha worked for nearly 20 years in marketing and communication roles, largely serving the higher education and non-profit sectors.
Holly Miller, Chief Baker
Holly Miller has owned Holly’s Country Canning for nearly ten years. Through this venture, she offers canned jams, jellies, and salsas, as well as custom baking, including specialty cakes, pies, cupcakes, and desserts. She served as the store manager for two locations within the Prep, Freeze, Cook franchise, including managing the opening of a new branch location in Champaign. In addition to her work in the food service industry, Holly has had a successful career as a human resources professional, serving a variety of organizations in the greater Champaign area. Holly has been involved in the food service industry for many years, with experience in management, menu creation, marketing, sales, and customer service.
